They're simple little things, the soft-shell crabs at Chez Thuy -- deep-fried whole, with a beautiful golden batter crisp out of the oil and just a little spicy, the shells inside chewy, yielding and full of juicy meat. The accompanying nuoc mam fish sauce is bright as acetylene, so sharp that a sniff of it is dizzying, like a toot of model-airplane glue. So you can be forgiven if you go a little nuts when the crabs (served two or three to an order) are brought to the table with a whole garden of sides: lettuce for wrapping, rice noodles, mint, basil, what-have-you. Dig in with your fingers and create the ideal bite: It just might be the best crab you'll ever eat in your life.

Had lunch at Chez Thuy Restaurant with a group of people and decided to skip the Pho and go directly for different Vietnamese dishes.
We ordered lemongrass chicken, steamed catfish and softshell crab.
Everything was fresh and tasted just I like I remember from my trip in Vietnam.
Next time I am in Boulder, I will go back to this place. Food was fresh and flavorful.

I have never had anything distasteful here. I usually have something different each time and I have never been disappointed. The hot pots are amazing, as are the Vietnamese egg rolls. Someone complained about the lack of variety with kid's meals, but you tell me even one restaurant that has a decent kids menu. It is ALWAYS the same tasteless food. Order them a small plate or an appetizer if your kid is used to good food! This is worth the drive to Boulder. Food is ALWAYS temperature hot, that other restaurants can't seem to master!

OMG it was awesome. Tons of very tasty food and not a lot of money. Enjoyed everything we had and can't believe how big he menu is. We will go ther the next time we are in Bouder.

Been coming here for 2 years since I moved to Boulder. Never had a bad meal. The service is good as far as taking order, refilling water, busing etc. But not really what some people would be looking for as far as "friendly" - which is great for me because I prefer good food and service to annoying servers. The food was incredible, I have probably tried about 20 menu items and each one surprises me pleasantly. Great pho.
Great duck, chicken, meat - they use an unbelievable fusion of Vietnamese and French flavors and cooking style. If you love good food please go try this place.
